Egg masala is an easy to make indian side dish that you can have with any indian bread or naan. You may also use use this as a filling for your sandwich. But donot forget to toast the bread.
Ingredients:
- 4 boiled Eggs
- 1/2 Red Onion chopped
- 1 tomato (chopped into 8 large pieces)
- 1/2 tsp Ginger-garlic paste (take equal amounts of ginger and garlic and grind it)
- 1/2 tsp Black Pepper powder
- 1 tbsp Cumin Powder
- 1/2 tsp Turmeric powder
- 1 1/2 tbsp Coriander powder
- 1 tsp Chili powder
- 1 tsp Cumin seeds
- 1/4 tsp Garam Masala powder
- 1/2 tsp Fennel seeds
- 1 tbsp Olive Oil
- Salt to taste
- Coriander leaves to garnish
Instructions:
1. Cut the boiled eggs into two halfs.
2. In a pan add oil, when it's hot add
cumin seeds and fennel seeds.
3. Now add the onions and turmeric powder and saute it in low flame until the onion turns brown.
4. Add the tomatoes. Donot overcook the tomato. Add all the spices and saute it for 5 minutes.
5. Now add the eggs and carefully mix so that the egg
yolks should not fall apart.
6. Garnish with coriander leaves and you can have it with indian roti or pita bread.
