Phirni is a yummy indian rice pudding. It is a very nutritious and low calorie, low fat, low sugar dessert.
Ingredients:
- 2 cups basmati rice
- 2 cups Skimmed milk
- Sugar, 2.5 Tbsp or to taste ( I use honey as a sweetner)
- Almonds, 15-20 grated
- Cardamom seeds powdered, 1/2 tsp
- A few strands of saffron
Instructions:
- Soak rice in water for 2 hours, then drain water and grind into a course paste.
- Place a thick bottomed deep pan or skillet on medium heat and boil milk. Add rice and let it cook on medium heat until it gets thick in consistency. Add cardamom powder, saffron and almonds and mix well. Add sugar (or any low calorie sweetner of your choice) and mix well.
- Transfer to serving bowls and chill. Your pherni is ready to be served.
