Ingredients
- 1/2 kg salmon
- 1 red chilli finely chopped
- Juice from one lemon
- 2 tbsp sweet chilli sauce
- 1 tsp fish sauce
- chopped spring onions - a handfull
- chopped coriander- a handfull
- 1 tbsp brown sugar
Instructions
- Fillet the salmon.
- Score the thickest part of the salmon a couple of times with a knife.
- Mix coriander, sugar, fish sauce, lime juice and sweet chilli sauce. Brush the fish with the mix and marinate for 30 minutes.
- Place the marinated fillets on a baking paper. Top the fish with spring onions. Fold the baking paper to form a parcel as shown here.
- Place the parcel in the oven for 20 minutes at 200 degrees until the salmon is cooked properly and opaque.
- Sprinkle spring onions and coriander after taking the salmon out. Squeeze some more lime juice and serve with basmati rice.
