Sweet Chilli and Lime Salmon Parcels

Ingredients
  • 1/2 kg salmon
  • 1 red chilli finely chopped
  • Juice from one lemon
  • 2 tbsp sweet chilli sauce
  • 1 tsp fish sauce
  • chopped spring onions - a handfull
  • chopped coriander- a handfull
  • 1 tbsp brown sugar

Instructions
  1. Fillet the salmon.
  2. Score the thickest part of the salmon a couple of times with a knife.
  3. Mix coriander, sugar, fish sauce, lime juice and sweet chilli sauce. Brush the fish with the mix and marinate for 30 minutes.
  4. Place the marinated fillets on a baking paper. Top the fish with spring onions. Fold the baking paper to form a parcel as shown here.
  5. Place the parcel in the oven for 20 minutes at 200 degrees until the salmon is cooked properly and opaque. 
  6. Sprinkle spring onions and coriander after taking the salmon out. Squeeze some more lime juice and serve with  basmati rice.
